Lemon Cake

Ingredients:
250g flour
200g sugar

  • 1 sachet baking powder
  • 3 eggs
    120ml lemon juice (about 3 lemons)
    Zest of 2 lemons
    100g melted butter
    100ml milk
  • 1 pinch of salt
    For the icing:
    120g icing sugar
    A knob of butter
  • 1 small cup orange blossom water
    Juice of 1 lemon
  • 1 egg white
    Preparation:
    The batter:
    Whisk the eggs with the sugar until the mixture is light and fluffy. Add the lemon juice and zest, the melted butter, and the milk.

Gently fold in the flour, baking powder, and salt.

Pour the batter into a greased loaf tin and bake at 180°C (350°F) for 40 minutes. Incorporate the flour, baking powder, and salt, mixing gently.

Pour the batter into a greased loaf pan and bake at 180°C (350°F) for 40 minutes.

The glaze:
Mix the powdered sugar with the evaporated egg, the juice of one lemon, a knob of softened butter, and a small cup of orange blossom water.
Drape the cooled cake with this glaze.
Let it set before slicing and serving.
