Chicken Caesar Croissant Sandwich
Ingredients (for 4 sandwiches):
4 butter croissants, sliced in half lengthwise
2 chicken breasts (or 2 cups shredded cooked chicken)
4 crisp romaine lettuce leaves
4 slices of crispy bacon (optional but delicious)
4 tbsp Caesar dressing
1/4 cup grated or shaved Parmesan cheese
1/2 lemon (for drizzling over the chicken)
Salt and pepper Preparation:
Cooking the chicken: Cut the chicken breasts into strips. Season with salt, pepper, and a squeeze of lemon. Sauté them in a pan with a little olive oil until golden brown and cooked through. You can also use shredded grilled or rotisserie chicken.
Preparing the Caesar dressing: In a bowl, combine the still-warm chicken with the Caesar dressing and Parmesan cheese. Taste and adjust the seasoning if necessary.
Prepare the croissants
Lightly toast the croissants in the oven or in a pan (optional, but it makes them even better!). Assembly
On the bottom half of each croissant, place a crisp lettuce leaf, then a generous portion of the Caesar chicken mixture. Add a slice of crispy bacon if you like. Close with the top half of the croissant.
Tip:
Serve them with homemade fries, chips, or a small fresh salad. And if you want extra creaminess, add a thin slice of avocado to the sandwich.
